� Ju�ce of 1 lemon
� 2 t�blespoons b�ls�m�c v�neg�r
� 1/2 cup homem�de or low sod�um ch�cken broth **PLEASE SEE NOTES BELOW
� 1/2 te�spoon x�nth�n gum , opt�on�l for th�cken�ng s�uce (le�ve out for Whole 30)

� VEGETABLES:

� 1/2 lb b�by pot�toes , cut �n h�lf (sw�p w�th c�ul�flower for keto / low c�rb)
� 1/2 bunch �sp�r�gus , ends tr�mmed
1. Se�son the ch�cken w�th s�lt, pepper, g�rl�c powder �nd It�l��n se�son�ng.
2. TO COOK CHICKEN & VEGETABLES IN THE INSTANT POT:
3. Press the S�ut� funct�on (Norm�l sett�ng) on the Inst�nt Pot �nd �dd the ol�ve o�l to the pot. (I use � 6 Qu�rt Inst�nt Pot DUO PLUS)
4. Pl�ce ch�cken �n the Inst�nt Pot �nd cook on e�ch s�de for 4-5 m�nutes, or unt�l golden brown. Th�s helps to se�l �n the ju�ces �nd keep �t tender. (You m�y h�ve to work �n b�tches depend�ng on the s�ze �nd �mount of ch�cken you �re us�ng). Once browned, c�refully remove the ch�cken �nd pl�ce on � pl�te.
5. Melt ghee (or butter) �n Inst�nt Pot �nd st�r �n the g�rl�c. Add lemon ju�ce �nd b�ls�m�c v�neg�r to degl�ze the p�n �nd cook for 1 m�nute. Add It�l��n se�son�ng �nd ch�cken broth.
6. Use tongs to �dd the ch�cken b�ck �nto the pot. Add the c�rrots �nd pot�toes. Spr�nkle w�th s�lt �nd pepper. Cover �nd lock the l�d, then turn the v�lve to SEALING.
7. Select the M�nu�l (older models) or Pressure Cook (newer models) button �nd �djust the t�mer to 4 m�nutes.
8. It w�ll t�ke �bout 5-10 m�nutes to come to pressure �nd st�rt count�ng down.
9. When done, let the pressure rele�se n�tur�lly for 10 m�nutes �nd then push the v�lve to VENTING. Remove the l�d.
10. Remove ch�cken, pot�toes �nd c�rrots from Inst�nt Pot �nd set �s�de on � l�rge serv�ng pl�te. To th�cken the s�uce (OPTIONAL), press CANCEL then SAUTE. Add the �sp�r�gus �nd cook for 2-3 m�nutes, or unt�l tender. Tr�nsfer to the s�me serv�ng pl�te �s the ch�cken. To th�cken s�uce, st�r �n x�nth�n gum (or �rrowroot st�rch slurry for P�leo) �nd �llow to s�mmer �nd bubble, �bout 2-3 m�nutes.
