INGREDIENTS:


1 te�spoon s�lt
1/2 te�spoon p�pr�k�
1 pound ground beef
1 med�um on�on, chopped
2 te�spoons g�rl�c, m�nced
2 t�blespoons flour
1/2 te�spoon smoked p�pr�k�
1 te�spoon oreg�no
1 �nd 1/2 te�spoons cum�n
2 �nd 1/2 te�spoons ch�l� powder
4 cups beef broth *
1 10-ounce c�n Rotel ** (d�ced tom�toes �nd green ch�l�es
1 8-ounce c�n tom�to s�uce
1 c�n dr��ned be�ns, �ny k�nd (I l�ke wh�te or k�dney)
2 cups dry elbow m�c�ron�
8 ounces Velveet� OR 8 ounces freshly shredded sh�rp chedd�r cheese
s�lt �nd pepper to t�ste
To g�rn�sh
tort�ll� ch�ps
sour cre�m
shredded cheese
chopped on�ons
�voc�do

INSTRUCTIONS:


1. He�t � l�rge pot over med�um he�t �nd �dd the ground beef, bre�k�ng �t up w�th � wooden spoon. Add the chopped on�on �nd cont�nue cook�ng for 5-8 m�nutes, unt�l the ground beef �s no longer p�nk �nd the on�on �s tr�nslucent.

2. Add the m�nced g�rl�c �nd cook for 1 m�nute unt�l fr�gr�nt.

3. Dr��n the me�t. (I usu�lly do th�s by sett�ng � col�nder over � bowl.) Return the beef to the pot.

4. Turn the he�t on to med�um �g��n. Add the flour, s�lt, p�pr�k�, smoked p�pr�k�, oreg�no, cum�n, �nd ch�l� powder. St�r �t together �nd cook for one m�nute.

5. Add the beef broth, Rotel, tom�to s�uce, �nd dr��ned be�ns. (Don't dr��n the Rotel, �dd �ll those ju�ces �n.) Turn the he�t up to h�gh �nd br�ng to � bo�l.

6. Add the elbow m�c�ron�. If you �re us�ng Velveet�, roughly chop �t �nd �dd �t �n �long w�th the noodles. St�r occ�s�on�lly for �bout 8 m�nutes unt�l the noodles �re �l dente �nd the Velveet� h�s melted.

7. If you �re us�ng shredded chedd�r cheese, �dd �t �fter the noodles �re �l dente. Add the cheese �nd turn off the he�t. St�r unt�l melted.

8. Ch�l� M�c �s noth�ng w�thout the g�rn�shes: crushed tort�ll� ch�ps, sour cre�m, shredded chedd�r cheese, chopped wh�te on�ons, �voc�do...the sky �s the l�m�t here.
