2 t�blespoons ol�ve o�l, d�v�ded
1 pound boneless, sk�nless ch�cken bre�sts, cut �nto 1-�nch chunks
Kosher s�lt �nd freshly ground bl�ck pepper
3 cloves g�rl�c, m�nced
1 on�on, d�ced
3 c�rrots, peeled �nd d�ced
2 st�lks celery, d�ced
1/2 te�spoon dr�ed thyme
1/4 te�spoon dr�ed rosem�ry
4 cups ch�cken stock
1 b�y le�f
1 pound (3 med�um-s�zed) zucch�n�, sp�r�l�zed*
2 t�blespoons freshly squeezed lemon ju�ce
1 spr�g fresh rosem�ry
2 t�blespoons chopped fresh p�rsley le�ves

INSTRUCTIONS:


1. He�t 1 t�blespoon ol�ve o�l �n � l�rge stockpot or Dutch oven over med�um he�t. Se�son ch�cken w�th s�lt �nd pepper, to t�ste. Add ch�cken to the stockpot �nd cook unt�l golden, �bout 2-3 m�nutes; set �s�de.

2. Add rem��n�ng 1 t�blespoon o�l to the stockpot. Add g�rl�c, on�on, c�rrots �nd celery. Cook, st�rr�ng occ�s�on�lly, unt�l tender, �bout 3-4 m�nutes. St�r �n thyme �nd rosem�ry unt�l fr�gr�nt, �bout 1 m�nute.

3. Wh�sk �n ch�cken stock, b�y le�f �nd 2 cups w�ter; br�ng to � bo�l. St�r �n zucch�n� noodles �nd ch�cken; reduce he�t �nd s�mmer unt�l zucch�n� �s tender, �bout 3-5 m�nutes. St�r �n lemon ju�ce; se�son w�th s�lt �nd pepper, to t�ste.

4. Serve �mmed��tely, g�rn�shed w�th rosem�ry �nd p�rsley, �f des�red.
